THE WINERY
Jean-Paul & Benoit Droin is a family owned estate in the Chablis region
of France. The domaine owns 13 hectares of vineyards and produces 14 different
wines, including Petit Chablis, Chablis, 7 Premiers Crus and 5 Grands Crus.
VINEYARDS
Chablis is known for its unique Kimmeridgian limestone soils
that contribute to the mineral character of the wines. Most of Droin's top
vineyards have this soil, giving typical oyster shell and wet stone characters
to the wines. Average age of the vines
is 15 years.
VINIFICATION
Pneumatic pressing. Natural enzymatic settling for 12 to 24 hours at around 15°C then fermentation with indigenous yeasts, partly in stainless steel vats, partly in barrel..
Systematic malolactic fermentation.
Ageing: 8 to 10 months in stainless steel tanks.

White meats, lobster, mature cheeses.
