THE WINERY

VINEYARDS
Age of the vineyard: 90 years. With wide temperature swings
between cold nights and hot days, the Arizu family have come to appreciate that
Mendoza’s desert climate and terroir offer unique benefits to the wines they
produce: it amplifies the aromatics and colour and keeps the acidity balanced,
while the alluvial deposits in the soil provide minerality and depth.
VINIFICATION
The grapes are hand-picked in boxes from 18 to 20 kilograms. The must is macerated in cold for 5 to 7 days
at a temperature from 10°C to 15°C. Then it is fermented with selected yeast in
stainless steel tanks in controlled temperature between 25 ° C and 28 ° C.
Followed by malolactic fermentation in oak barrels.
Ageing: Between 18 -2 0 months in oak barrels for 14 months
