TASTING NOTES

The altitude, location and microclimate of the region where Rosso di Montalcino originates give the wine intense forest aromas with hints of red fruits and ripe cherries. The ruby color varies in intensity from vintage to vintage. The tannins are felt, but are soft and have a long finish.


THE CELLAR

Umberto Salvioni, who had studied agriculture, chose to make wine so that he could offer it to his friends. His son Giulio decided to extend the range of friendship, creating a winery that could produce a limited number of bottles of absolute excellence.Following his degree in Agriculture, Giulio’s son David joined the family concern to help with vine husbandry and winemaking. More recently, his sister Alessia has completed the team, working alongside her father on marketing, sales and administration.


VINEYARDS

Azienda Salvioni produced its first Brunello di Montalcino wine in 1985 from grapes from La Cerbaiola vineyards. The plantations cover 20 hectares and are divided into three plots of vines with grapes Sangiovese, ranging in age between 10 and 25 years. The vineyards are planted at an altitude of 420 to 440 meters above sea level, and each plot is characterized by its own different microclimate and soil composition.


VINIFICATION

Vinification takes place in the cellar of the winery located next to the vineyards in 35-40hl stainless steel vats and usually lasts 28-30 days depending on the vintage. The fermentation occurs naturally in the days following the harvest where there is no temperature control.

Ageing: after racking, the clean wine remains in the stainless steel vats for a few more months during which time the malolactic fermentation occurs very naturally before it is put in barrels. For ageing the wine, the winery has always used big 18-22hl medium toasted Slavonian oak barrels. 

Bottle Ageing: Rosso di Montalcino stays in wood for 12 months and is released on the market the second year after the harvest after a short period of bottle ageing.


FOOD PAIRING

This Brunello combines perfectly with roasted red meats and game.
