TASTING NOTES
The nose shows a wide floral bouquet of rose and violet, along with fruity and mineral notes. On the palate, the quality of the tannins and the great freshness create an elegant wine with infinite aromas and aftertaste.
Thymiopoulos family has been in agriculture and grape-growing in the village of Trilofos for generations. Apostolos Thymiopoulos was the first to vinify the family vineyards while studying oenology. In 2005, he produced his first wine named “Earth and sky”. He truly believes in sustainable viticulture and minimum intervention during the whole winemaking process.
VINEYARDS
Thymiopoulos Winery is known for its expertise in producing wines from the Xinomavro grape variety. Xinomavro is a red grape native to the Naoussa region and is often referred to as the "Greek Nebbiolo" due to its similar characteristics to the famous Italian variety. Thymiopoulos Winery focuses on showcasing the unique qualities of this grape in their wines.
The winery has a special focus on working with young vines. They believe that young vineyards have the potential to produce exceptional wines. By carefully managing these vines, they are able to produce wines that are vibrant, fresh, and expressive.
VINIFICATION
Grapes are 60% destemmed, fermented with indigenous yeasts and macerated for 20 days.
Ageing: 12 months in 500-litre, second use French oak barrels
